Today, I will be sharing with you a recipe on how to make Vegan Lentil Salad with Tomatoes and Chives.
The first ingredient in this vegan salad is lentils. I used French lentils. Lentils are great for your heart and they’re also a great way to help you lose weight. Other benefits include improving digestive health, a great source of fiber and plant-based protein.
One of the great things about lentils is that they’re easy to incorporate in many recipes. Whether in salads, soups, pasta or side dish, lentils are one the easiest ingredients to incorporate in any meal. It’s also a great meat alternative.
Another great fact about lentils is that they are one of the rare ingredients that include the most nutrients in one single serving.
Aside from lentils, the next ingredient in this salad is red onion. Red onions are rich in vitamin C. You also want to use yellow bell peppers in this recipe which are also rich in vitamin C, fiber and low in calories. Cherry tomatoes are also used in this recipe.
One thing you want to remember when making healthy salads or any healthy meal is to include a lot of color. Each color has its nutritional benefits so you want to ensure you’re incorporating as many colors as you can so you get all the nutritional elements you need in a meal.
When it comes to using herbs in this recipe, chives are a great option. Rich in vitamin C, A and K, chives offer several healthy benefits. They’re mostly known for boosting bone strength and can help reduce inflammation.
For the dressing, you want to use a bit of lemon juice, balsamic vinegar, salt, pepper and olive oil. I suggest putting it in the refrigerator for about 30 minutes to one hour just to give the ingredients time to blend and marinate. You can either eat this on its own or pair it with quinoa or rice depending on your preference.
